Icon recipe of the day
BETWEEN CHRISTMAS AND NEW YEAR'S PIE
You won't believe how great this pie tastes and how easy it is to make. Plus, all the ingredients are already in your kitchen. There's a warning at the bottom of the recipe.
1 cup applesauce
1/4 cup sugar
1/4 t salt
1/4 t cinnamon
1/4 t nutmeg
2 Tbs margarine
1 egg and 2 egg whites (well beaten, of course)
2 cups milk
Rind of one lemon - finely chopped
Add to the applesauce the salt, nutmeg and margarine. Make the custard mixture with eggs, milk and lemon rind. Mix it with the applesauce.
Pour it all into a pie crust. We assume you've already figured a pie crust is part of this project.
Bake at 450 degrees for 10 minutes and then reduce heat to 350 for the next 40 to 50 minutes.
Good news: Eat this pie the first day it's out of the oven. It's fantastic.
Bad news: Don't leave any in the refrig for Day 2. You'll be sorry.
