In the kitchen: Curried eggs on rice

This recipe came from an Hellman's Mayonnaise ad in the '60s. It is a delicious company recipe - very attractive too.

Curried Eggs on Rice

1 cup Hellman's Real Mayonnaise (substitutes make this a less-tasty but lighter dish - don't use Miracle Whip which is a salad dressing, not a mayonnaise)

1 cup dairy sour cream (or plain yogurt - again - lighter taste)

3 oz can of sliced mushrooms

1/4 cup milk

1 TBSP cooking wine (white) or lemon juice

2 TBSP curry (your choice - they range from hot to mild, tastes differ as well)

1/2 tsp salt

1/2 tsp dry mustard

1/4 tsp pepper

2 cups hot rice (white, brown, even the non-rice wild rice)

Six hard-cooked eggs, peeled

Mix first 8 ingredients in saucepan. Cook over medium heat, stirring constantly 4 - 5 minutes until warm through.

Slice eggs and arrange in a pleasing pattern over rice that has been put into a baking dish. (8x8x2).

Spoon curry mixture over the eggs and rice.

Bake at 325 degrees F. 15 minutes.

Enjoy in peace. Ignore the calories and fat - this is a once in awhile dish - and delicious.
